The Gironde is both the river along which Bordeaux’s Grands Crus Classés vineyards are located, and the natural habitat where the sturgeon used to produce Aquitaine IGP caviar are raised. Why caviar and Grands Crus Classés together?
Bordeaux’s Grands Crus Classés – Margaux, Pomerol, Pessac-Léognan, Saint-Émilion – are all located along the Gironde. The river regulates the climate, influences the soils and plays a key role in shaping these exceptional terroirs. And in that same river, sturgeon have been raised for decades – the Gironde is one of the last rivers in Europe where wild sturgeon have survived, and it is also where Aquitaine IGP caviar comes from: France’s first caviar.
Bringing these two products together is a way of telling the story of a territory. It’s not just about tasting great wine and great caviar, it’s about understanding why they come from the same place, and what that reveals about the Gironde as an exceptional natural and winemaking environment.
How does the workshop unfold?
The workshop is hosted by Laetitia Ouspointour, oenologist and holder of a Champagne Education Level 4 diploma – a high-level qualification that allows her to explain each pairing with precision and describe exactly what’s happening in the glass.
The tasting features three pairings:
First pairing: dry white Grand Cru Classé and first caviar. The freshness and tension of the white wine enhance the delicacy of the caviar without masking its aromas. A pairing built on finesse.
Second pairing: Champagne and second caviar. The bubbles and acidity of the Champagne contrast with the creamy texture of the caviar, a pairing built on contrast and vibrancy.
Third pairing: Grand Cru Classé 1855 Sauternes Barsac and Aquitaine IGP caviar. The most surprising pairing – the sweetness and aromatic complexity of this great wine set against the intense iodine notes of the caviar. A pairing built on the unexpected.

The boat option: tasting the territory with the water right beside you
For those lucky enough to experience it in this setting, the workshop can take place on a boat on the Gironde estuary. You taste the caviar and the GCC with the river that produced them right there as your backdrop. It’s an even more powerful experience, you’re no longer just talking about the territory, you’re immersed in it.
