Sturia, France’s leading producer of French caviar
Sturia embodies French luxury gastronomy. The flagship brand of France’s leading caviar producer, Sturgeon, was founded 20 years ago near Bordeaux. Each year, Sturgeon produces around 18 tons of caviar, which it sells worldwide.
The company operates eight different sites dedicated to sturgeon farming and caviar production : seven aquaculture farms and one caviar processing workshop.

It is Sturia’s expertise that has built its outstanding reputation. Sturgeon farming is an exceptionally long and meticulous process. Female sturgeons, for example, are raised for around eight years until they reach full maturity. The timing of the harvest is also crucial in the caviar-making process. It is determined using ultrasounds and a biopsy, allowing experts to taste the caviar and ensure its quality. Harvesting is seasonal and takes place from September to March.

To guarantee excellence, Sturia follows the traditional caviar-making process. First, the eggs are carefully hand-sieved and washed in clear water, then lightly salted before being placed in tins. The caviar then enters a maturation phase, which takes place in the refining room.
