The workshop is hosted and guided by Laetitia Ouspointour, an oenologist with recognized training in Champagne wines. Holding a Champagne Education – Level 4 diploma, Laetitia Ouspointour possesses in-depth expertise in Champagne wines, including terroirs, production methods, and advanced sensory analysis. This high-level certification enables her to explain precisely the influence of Champagne in caviar pairings and to demonstrate their gustatory balance.
Each pairing is designed to highlight the texture, salinity, and length on the palate of the caviar, while illustrating the influence of the wines and Champagne on sensory perception. The tasting experience provides insight into why certain combinations achieve such precision and balance.
Aquitaine caviar, the benchmark of French caviar
The tasting begins with Aquitaine caviar, recognized by its Protected Geographical Indication (PGI) status. This French caviar, produced from sturgeon farmed in Aquitaine, stands out for the consistency of its pearls, its freshness, and its aromatic balance.
